Introduction What are PFAS? Per- and polyfluorinated alkyl substances (PFAS) are a large group of structurally diverse aliphatic compounds, distinguished by a fully (per-) or partially (poly-) fluorinated chain of carbon atoms, often connected to at least one functional group (Figure 1; Supplementary Table S1; OECD, 2021). Most PFAS are amphiphilic compounds, due to the hydrophobic properties of their fluorinated alkyl “tail” and hydrophilic properties of their functional groups.
