I love smoking meat! But one of the downsides of smoking meat is a lot of leftovers. This is a recipe I used to use up some smoked pork I had in my freezer. Chop the smoked pork into small pieces. Heat a large Dutch oven over medium high heat. Add 2 Tbsp of vegetable oil, and give the pork a quick stir fry. Remove with a slotted spoon to a plate and set aside. Reduce the heat to medium, add 1 Tbsp oil and the onion. Cook until soft, scraping up any brown bits from the bottom of the pot, about 5 minutes.
