It’s my birthday, and it’s 70 degrees outside, and Kate (the dog) is glaring at me, begging for a park trip. So here’s a quick one for you that’s also a perfect recipe for the weekend. I developed this recipe for our friends over at Graza a couple of weeks back, but it’s so good that I wanted to share it with you all here. This pancake is not too sweet yet not savory, and the cornmeal gives it a great flavor while still being fluffy. The real kicker is the maple syrup emulsified with olive oil.

What a perfect return to NYC restaurants: crammed into a cozy little space, perched at a tiny little table, an inch from your neighbors, reveling in their gossip. It was like coming home, if “home” included the possibility of strangers breaking up next to you. We ordered a vegetarian entree that night, not because it was veggie, but because it sounded so good.

I don’t need to tell anyone reading about the situation in Ukraine. And as you may have noticed, I hadn’t referenced it yet in this newsletter. This is a recipe newsletter, I thought, and people with knowledge of and connection to Ukraine are saying everything that needs to be said. But the violence is nowhere near over. And as I saw the relief efforts being organized by people I do have connections to, I realized that I could use this edition of the newsletter to help amplify their work.

Some recipes on this newsletter have a story: some kind of personal anecdote, or a historical basis. This is not one of those recipes. What this recipe is though, is deeply delicious. This is a true case of “the recipe you’re about to read is something that I just wanted to make and eat.” Tender, vibrantly-colored gnocchi in a tangy horsey sauce with a metric ton of chopped dill. I bet you’ll want to make and eat it too.
