It’s easy to make, stays fresh for days, and is perfect for BBQs, potlucks, and summer dinners. Farro is one of my favorite grains to use in recipes. I love it’s chewy texture and nutty flavor.
Summer Berry Pie (aka Triple Berry Pie)
To make the buttermilk pie crust: In a large bowl, stir together the flour, sugar and salt. Add the butter and cut into the dry ingredients with a pastry blender or knife until pieces are the size of peas. Add the buttermilk and stir to make a shaggy dough. Dump the mixture out onto a clean counter and use your hands to bring it together. Add more buttermilk a tablespoon at a time, if necessary. (but it's okay if it's on the dry side). Form into two equally sized disks.

Individual Banana Pudding Cups
Whisk milk and pudding mix together in a large bowl for 2 minutes until thickened. Set aside. With an electric mixer, beat heavy cream with sugar, vanilla and salt till thickened to medium peaks. Add half of the whipped cream to the vanilla pudding and gently fold together with a spatula until mixture is smooth and creamy. Slice bananas into a bowl. Optional, toss bananas with lemon juice (This prevents the bananas from browning and is recommended if you're not serving the pudding cups immediately).
