Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In a large bowl, combine the 2 lbs ground chicken, ⅓ cup almond flour or breadcrumbs, minced 2 cloves garlic, 1 teaspoon grated ginger, 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon green onions, and 1 teaspoon coconut aminos. Mix gently until just combined (avoid overmixing to keep meatballs tender).

Mince the garlic and slice the green onions (if using), reserving the green onions for garnish. Brown the ground turkey in a large skillet with one tablespoon sesame oil over medium-high heat, breaking it apart as it cooks, about 4 minutes. Transfer cooked turkey to a fine mesh colander to drain any excess grease. Return empty skillet to the burner and reduce heat to medium-low. Add remaining sesame oil and minced garlic. I never get tired of the sweet-and-savory flavor, and it’s a recipe that always reminds me of summer evenings with my family. These teriyaki chicken skewers are easy to make with simple ingredients you can find at almost any grocery store.
Homemade General Tso Shrimp
Pat 1 pound large shrimp dry with paper towels. Transfer shrimp to a bowl, season lightly with ¼ teaspoon salt, and toss with 4 tablespoons arrowroot powder until the shrimp are coated evenly. Heat 2 tablespoons oil in a large skillet over medium-high heat. Cooking in 2-3 batches (so the pan isn't overcrowded), sauté the shrimp for 1 minute per side, until they start to turn pink. Set them aside on a plate. *The shrimp will not be fully cooked at this point.
Easy Roasted Yukon Gold Potatoes
Preheat the oven to 425°F. Lightly oil a large baking sheet, or line with parchment paper. Parchment is best for easy cleanup, but bare metal creates better browning. In a small bowl, measure out the 1 teaspoon garlic powder, 1 teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon smoked paprika. Stir to combine. To a large bowl, add 2 lbs. Yukon Gold potatoes, 2 tablespoons olive oil and seasoning. Toss well to coat.
Turkey Bolognese (One Pot Spaghetti)
Heat a large pot (I use a Dutch oven) over medium-high heat. Add 1 pound ground turkey and cook, breaking up with a spoon, until browned and no longer pink, about 6-8 minutes. Season turkey with 1 teaspoon dried oregano, 1 teaspoon dried basil, ½ teaspoon salt, and ½ teaspoon black pepper. Stir to combine, then drain any excess grease. Transfer turkey to a plate and set aside. In the same pot, heat 1 tablespoon olive oil over medium heat. Add diced ½ cup onion and ½ cup carrots.

Air Fryer Stuffed Peppers
Preheat air fryer to 400°F. *If your air fryer doesn't have a preheat setting, just turn it on about 10 minutes before you start cooking. In a medium pot over high heat, bring 1.5 cups water or broth to a boil. Reduce heat to low, add uncooked rice, cover, and simmer for 18 minutes. Let stand 5 minutes, then fluff with a fork. ¾ cups white rice Meanwhile, cut off the tops of the bell peppers and remove the seeds and ribs.

Preheat air fryer to 375°F. Use your hands to mix all burger ingredients (1 pound ground turkey, ⅓ cup almond flour, 1 teaspoon salt, 1 teaspoon ground black pepper, 2 teaspoons onion powder, 2 teaspoons garlic powder, and 1 teaspoon paprika) in a large bowl until well combined. Portion the mixture into baseball-sized balls, then flatten into thin patties. *They tend to puff up in the air fryer, so you want them thin so they stay large enough for your burger buns.
