Fernglen Farm Labneh with Roasted Leeks and Pine Nuts
Serves: 2 - 3 INGREDIENTS 2 medium leeks, white and pale green parts only ½ cup extra virgin olive oil sea salt and ground pepper To serve oil from baking the leeks ¾ teaspoon smoked paprika 2 cloves garlic, crushed 1 teaspoon finely grated lemon zest 2 teaspoons lemon juice ½ teaspoon runny honey 160 grams Fernglen Farm Labneh ¼ cup roasted pine nuts METHOD Preheat the oven to 160°C regular bake. Cut the leeks in half lengthwise through the root.
Monty & Sons Radiatori with Winter Greens and Walnut Pesto
Drop the kale into a medium pot of well-salted boiling water and cook for 2 minutes. Add the remaining greens and turn to wilt. Immediately drain into a colander. Refresh in cold water, then drain well and squeeze out any excess water. Spread out on a clean tea towel and roll up tightly to remove the remaining water. Roughly chop the greens and blitz in a food processor with all the remaining ingredients, except the vinegar, until well chopped.
