Eine spezielle Gefriermethode reicht aus, um eine fasrige Struktur mit attraktivem Mundgefühl zu erzeugen. Je nach Hülsenfrucht und Wasseranteil entstehen unterschiedlich feste Texturen, die sich für verschiedene Rezepturen eignen könnten.
Food innovation in your kitchen: Giving peas, beans and lentils a new bite
In brief Researchers at ETH Zurich use whole legumes as the starting material for new food products. In contrast, existing industrial products often rely on isolated proteins. A simple freezing technique creates a fibrous structure with an appealing texture on the tongue. Depending on the legume and the water content, the technique produces different textures that could be suited to various recipes.

ETH Zurich and the SETI Institute join forces to search for the origin of life
In brief ETH Zurich and the SETI Institute in California are both researching how life originates and whether it exists beyond Earth. The partnership will support a new ETH assistant professorship in the Department of Earth and Planetary Sciences, with close scientific ties to ETH Zurich’s Centre for Origin and Prevalence of Life (COPL). The aim is to strengthen this research, open up new perspectives and foster international collaboration across complementary scientific disciplines.
A look back at Scientifica 2026
Nine days of science, 1,500 researchers in action and around 40,000 visitors: the science festival organised by ETH Zurich and the University of Zurich was a huge success. Das war die Scientifica 2026
Gegen 40'000 Besuchende verzeichnete die Scientifica, das Wissenschaftsfestival von ETH und Universität Zürich, dieses Jahr. Doch nicht nur bei den Besucher:innen verzeichneten die Organisatorinnen einen Rekord. Auch das Angebot war einmalig gross. Zum Thema «Wie wir Wissen schaffen» präsentierten über 1500 Forschende, Studierende und Jungunternehmen ihre Projekte und Produkte. Neun Tage, vom 22. bis 30. August, dauerte das Festival.
