Bertrand Grébaut - An Appreciation
We are saddened to report that Bertrand Grébaut, the influential chef of Septime in Paris, died on Thursday after a long illness which he fought with great courage. Bertrand was just 44 and with his passing, the food world has lost one of its most influential and most loved chefs. On its opening in 2011 Septime bridged the gap between formal haute cuisine and traditional bistro fare – common now, but rare 15 years ago.

Himanshu Saini is an internationally acclaimed Indian chef based in Dubai. From an agricultural family, he started his culinary training at eighteen in Delhi. In 2014, he moved to Dubai as head chef of the a la carte restaurant Trèsind, and in 2018, he opened its sister tasting menu restaurant Trèsind Studio. This year, he earned Trèsind Studio a third Michelin star—the first Indian restaurant in the world to achieve this honor.

Tavares Strachan releases new edition, The Stranger, 2026
“I think artists should build trap doors. You shouldn’t build a thing that you can’t escape from,” the artist Tavares Strachan says in his new Phaidon Contemporary Artists Series book. “The whole premise of why I became an artist was that I was sold this idea that you could do whatever you want to do.” It’s an ideal Strachan has pursued throughout his life.
