Search ArticlesWHAT IS SPECIALTY COFFEE?
Specialty coffee is coffee recognized for its distinctive characteristics and higher value in the market. In other words, it’s coffee that people find special. But what makes coffee special can differ between people and markets. How does the SCA define specialty coffee? For some, specialty coffee is about the flavor and aroma that makes it memorable. For others, it’s about the story behind the coffee; where it comes from, how it is produced, and the people behind it.
Coffee Decoded: Smellwords — Specialty Coffee Association
Our senses of smell and of taste are closely linked; we detect them in organs connected to each other (our nose and mouth), they both detect chemicals in the environment (they are together called “the chemical senses”) and our brains combine them to create the experience of “flavor.” However, the two senses are different in some very fundamental ways. We can see this most clearly in the language we use to describe them.

The Specialty Coffee Association (SCA) is pleased to announce that the Coffee Value Assessment (CVA) is now available on two new digital platforms: TheBeanGeek, a free web-based tool for coffee professionals and enthusiasts, and Quantify CVA, an iOS and Android application offering advanced multi-evaluator data collection and analysis. Since its launch in April 2023, the CVA has continued to grow in accessibility and adoption across the global coffee community.

However, coffee extraction is highly sensitive to physical changes occurring during grinding. Retained coffee trapped inside the grind chamber oxidizes between shots and absorbs heat from the grinder body, introducing stale particles into fresh doses.

New SCA Equitable Value Distribution Report
From Insight to Action The EVD Report does not seek to define a single "correct" view of equity in coffee. Instead, using a process known as sensemaking, it surfaces diverse perspectives, identifies shared themes, and maps opportunities for meaningful change. The SCA offers the research as a navigational tool, to help the sector make sense of a complex and often fractured landscape.
Coffee: A Multi-Species World
The topic of species is a charged one in coffee circles. To outsiders, this might be surprising: Why should biological taxonomy, of all things, be of importance to the people who grow, roast, and brew coffee? It wasn’t always so. When coffee was first discovered, roasted, and brewed, there was only one “kind” of coffee, and it was associated with the country we now call Yemen.
