Phil & Sebastian Coffee Roasters was founded in Calgary in 2007 by Phil Robertson and Sebastian Sztabzyb, two engineers who became completely obsessed with coffee.

NEW YORK, NY — September 30, 2026 — Devoción, the Colombian-founded coffee roaster known for bringing green coffee from Bogotá to Brooklyn in as little as 10 days, has launched the Devoción Impact Fund. Since August of this year, the company has been directing 1% of every retail coffee bag sold in its cafés and online, across both its US and Colombian markets, to projects that support coffee producers, young people in New York City, and the ecosystems where its coffee is grown.

September has come to an end. The Build-Outs of Coffee are in the rearview and cooler weather is just around the corner. Thus we turn the page to October, and lo and behold but calendar holds but a slew of coffee events. And now we reach endgame. This is the final—yes, the very last—newly opened or under construction coffee bar as part of the 2026 Builds-Out of Coffee feature series. It has been a true pleasure and distinct privilege to bring you this year’s Builds, and a rousing showing from our participating cafes all over the world. We’ll wrap up this year’s series with our annual Analytics of Autumn breakdown, showcasing the top trends and insights from the last few months of new cafe features.

Earlier this year, 2022 World Barista Championship Runner-Up and coffee influencer Morgan Eckrock announced the publication of her first book, Coffee, for Here: The Ultimate Handbook for At-Home Coffee Enthusiasts, a “a practical handbook and a guide to building real coffee skills at home, designed to help you brew with confidence and curiosity.” Ahead of its late-October release, Eckroth is heading out on a book tour, kicking off in Palo Alto, California.

OAKLAND, Calif. – September 29, 2026 — Blue Bottle Coffee today announced the launch of Notes in Repose, its first-ever compilation album, created in celebration of the brand’s Signature Blends. The limited-edition vinyl brings together 10 contemporary jazz compositions from artists representing nine cities across Blue Bottle’s cafe markets in North America and Asia, including Ali Shaheed Muhammad, Makaya McCraven, Jeff Parker, Angel Bat Dawid and the Kyoto Jazz Sextet.

We keep track of just about every detail across the Build-Outs of Coffee feature series, and we believe today represents something particularly unique in our archives. This feature takes us to the tiny town of Elverson, PA—population 1,322—and what may very well be the smallest jurisdiction ever to be featured in a Build-Outs story. Elverson is due east of Philadelphia, most of the way to Lancaster, and home to Twin Valley Coffee, a family-owned business with a 20 year legacy of serving coffee.

I’m old enough to remember when there was only one type of AeroPress. It was called the AeroPress. It was compact, plastic, inexpensive, and no frills. It was a revelation for on-the-go brewing. These days you’ve got big AeroPresses and little AeroPresses and glass ones and steel ones and colors galore. I’m not complaining or anything. I think it’s great. We’ve all grown up and so too has the coffee maker that was this close to being another frisbee.
