Afternoon Snack: Ligurian Torte Verde
Indulge in Liguria’s go-to dish – a savory tart filled with cheese, eggs, and greens on a thin olive oil crust. Whether for breakfast, lunch, or a snack, it’s a local favorite across the region. Torte Verde is a savoury vegetable tart very typical of Ligurian cuisine. There are lots of variations, but basically it’s composed of a mixture of cheese, eggs, and greens baked in a very thin olive oil crust.
Cast Iron Skillet Orange Rosemary Focaccia
This gorgeous skillet, infused with orange and rosemary, is no-knead and incredibly easy to make. The legendary focaccia is an Italian flat leavened oven-baked bread, that can be served as a side dish or as sandwich bread. Serve it with pasta, soup or on it’s own with just some olive oil. It’s also a wonderful sandwich bread – topped with some mozzarella cheese and prosciutto – you simply cannot go wrong. This version is no-knead and made in a cast iron skillet.

No-Churn Mint Chocolate Chip Ice Cream
Cool Recipes for the Hottest Days, Desserts, Featured May 25, 2019 by Beth Dunham 0 The secret to the superior flavour of this ice cream is an infusion of fragrant fresh mint leaves and cream. It’s the sweetened condensed milk that gives this frozen treat its decadent creamy texture. No churning required! It really doesn’t get much easier, whip some cream, add the condensed milk, and freeze.
Raspberry Limoncello Smash
Cocktails & Spirits, Featured July 5, 2016 by Beth Dunham 0 In moments you can have refreshing raspberry limoncello smash in your hand. Adjust based on how sweet your berries are and garnish with beautiful fruit. Just squeeze a couple of limes, crush a few berries, add some Limoncello and Lemon vodka, shake over ice, and voila, happy hour! The raspberries add a little sweetness to this tart libation, I added a little sugar too.
Barolo Braised Short Ribs
Cooking with Barolo is definitely a splurge, but life is uncertain and once in a while you’ve got to treat yourself. Just remember to savour every moment of this dish, from the intoxicatingly aroma of the slow braise, to the last drop of gravy mopped up with a crust of bread. I promise you it will be worth every penny. This one pot dish is my favourite memory of Barolo …the earthy mushrooms, tender beef slow cooked in a rich red wine, and it’s truffles.
How to Navigate an Italian Market
I won’t lie, my first time shopping for groceries in an Italian supermarket didn’t go so well. I failed miserably at fulfilling my list and I was scolded more than once in the process. So, in order to help you avoid similar embarrassment, I’ve put together a few pointers: Translate your shopping list – write down the Italian translation for each item on your list before you head to the market. This will be super helpful when reading labels.
Oysters Rockefeller Style for Two
I must have discovered a million different variations in my search for the original recipe for Oysters Rockefeller served at the famous Antoine’s Restaurant in New Orleans. Most were pretty complicated, so I’ve simplified things and come up with a recipe that mimics the flavours of this classic dish without all the fuss. It’s a decadent appetizer just for two, enjoy with a glass of bubbly and your favourite someone.
