Curious Cook: Lessons in structure
We live surrounded by structure. It is there in the buildings we walk through, the cars we drive, the railway networks and city grids we take for granted, and the timetables we quietly obey. But for every visible wall and walkway, there are unseen counterparts. Structures that govern societies, institutions, habits, and relationships are often invisible, yet they are just as rigid as buildings. As Marshall McLuhan observed, the fish does not see the water in which it swims.

Despite the unrelenting bad news on Earth’s water resource, there is hope. The solutions are not mysterious – just politically difficult and economically inconvenient for powerful interests. But they exist. The single largest lever is agriculture. Drip irrigation (delivering water directly to the root zone instead of flooding a field) can cut consumption by 30-70%. Areas adopting this halved agricultural water use per unit of output.

As humans take water out of the system faster than the hydrological cycle can replenish it, we are also polluting our water with chemical cocktails that water treatment plants were never designed to handle. Modern water treatment is built around the contaminants of the mid-twentieth century: sediment, bacteria, and other organic matter that makes water cloudy and unsafe. Add a coagulant, let it settle, run it through sand filters, add chlorine. For most of the 20th century, that was enough.

Many years ago, I was in Barcelona, on Spain’s northeastern coast, when I first understood – really understood, in my gut – what water scarcity means. I was staying in a hotel on a work assignment, and caught in a drought that had gripped Catalonia for months. The city’s reservoirs had dropped to 21% of capacity. Restaurants served meals on paper plates because dishwashers were banned. Hotel rooms had polite laminated cards asking guests to limit showers to three minutes.

As a food science writer, I often get asked about why pork fat is now considered so healthy, after decades of vilification as a driver of coronary heart disease. In the influential 2018 BBC list of the world’s 100 most nutritious foods (in terms of nutrient density), pork fat comes in surprisingly high at number eight. In many traditional Chinese households, a bowl or large jar of white, rendered lard is a staple of the kitchen, used for everything from stir-frying greens to making flaky pastries.
