Tuscan Kale and White Bean Soup Recipe: Parmesan Rind Broth
I keep this soup in rotation for cold weekends because it uses ingredients I almost always have: bacon, onion, carrots, garlic, thyme, chicken broth, cannellini beans, kale, and a Parmesan rind. The rind goes into the broth while it simmers and melts into a savory richness you cannot get from grated cheese alone. Small pasta goes in near the end, cooked directly in the broth. White wine vinegar stirred in just before serving lifts everything. A tablespoon, maybe two. You taste it immediately.
Chocolate-Peanut Butter Muffins
Chocolate-Peanut Butter Muffins are soft, fluffy and the perfect amount of chocolate flavor! Made with whole wheat flour, apple sauce, greek yogurt and peanut butter, enjoy these healthy muffins for breakfast, dessert or a snack. Pretty much all of my favorite muffin recipes involve chocolate chips (i.e. Sweet Potato Chocolate Chip Muffins, One Bowl Chocolate Chip Zucchini Muffins, Dark Chocolate Raspberry Banana Muffins… you get the idea) so I figured I’d keep the trend going.

Crockpot White Chicken Chili
The weather really took a turn here in Georgia and I’m not mad about it ( yet ? ) ask me that in a couple months and i might be a litttleee mad about it. As explained in my healthy crock pot honey garlic chicken recipe, I was not built for the cold. Cold weather makes me crave all sort of creamy, comfort foods — and since I pretty much live in my leggings once it hits the 70’s, it’s easy to get off track with healthy eating.

Anxiety and Interval Training: Life Lately
This week has been insane. My to-do list is about 8 miles long and so so SO much has been changing at work. While making the transition into adult-world, it took me a while to find a solid routine, and now I’m having to readjust/make a new schedule/find a new one... which has thrown me off juuuuust a little. It's gonna be ok though, right? With all this change at work my anxiety has SPIKED through the roof.
Decadent Chocolate Chess Pie
I was introduced to this delicacy at Michael’s house. It’s his grandma’s recipe so you already know it’s gotta be good. Mom’s and Grandma’s just know all the right moves when it comes to baking. AKA pounds of cream, butter, and sugar. Chocolate Chess Pie is super great because it requires limited prep time AND you get to put it in a blender. Which is just fun. I actually tried making it with a hand mixer at first andddddd when that failed I realized it literally got blended..in a blender.
