Rich, cheesy French onion soup is one of my favorite cozy soup recipes, and this easy lightened-up version is just as delicious as the original! It’s packed with caramelized onions in a warm, beefy broth, topped with crusty bread and melted cheese. We love going to our neighborhood restaurant for French onion soup, but it’s far from light. I wanted to recreate their soup at home so I could enjoy it more often, but with fewer calories.
