Dear Peakie
By: Jared Wilson, SFU Student, Kelly Chia, Editor-in-Chief Dear Peakie, I’m on a brave and arduous quest to find the outfit and accessory that will best convey to my classmates that I am not to be tussled with. I have the best discussion answers, and it’s about time everyone recognizes that from my aura alone. I’ve gotten into a few, how you say, kerfuffles as I’ve delivered a swift and just “well, actually,” and it’d be easier for everyone involved if they just know I’m always right.

Sweet potato chili: warm perfection on a cool day
Anyone who’s read any of these “Food for Thought” columns will know I value versatility. Like many an NBA general manager, everyone wants a “Swiss army” like player on their team. The multi-faceted sweet potato might just be the culinary world’s version. The sweet potato has long been one of my favorite vegetables. On one hand, the sweet potato can be sliced thinly and fried to make crunchy fries.
Hummus: Good enough for football
This is my favorite time of year, hands down. The cooler temperatures and the changing of the leaves almost demand throwing around a football in the backyard. I was surprised a few years back while watching some Sunday afternoon football when I noticed the Sabra company’s hummus was advertised as the “official dip of the National Football League." Really? I hadn’t noticed: hummus had made its way to the big time. I was introduced to hummus years ago by the health-conscious mom of my friend Julian.
That metric system is throwing us all off
My first trip to see the in laws in Norway was eye opening. At first it was all a little confusing. Kilometers instead of miles. Centimeters instead of inches. We’d stop at a gas station and gallons were nowhere to be found. The sale was measured in liters. But, hey, thanks to soft drink companies back in the U.S., I could understand that. And that brings me to a recent event that really widened and enlightened my viewpoint, more specifically my eating habits.
Zucchini boats: The perfect anything food
More than once this summer I’ve heard friends and family lamenting over a common “problem.” What to do with all their zucchinis? Zucchinis have garnered some attention recently in the culinary world. I’ve heard of and sampled some delicious zucchini bread. Awhile back I was introduced to zoodles when writing about spaghetti squash. This I’d never heard of until my wife Hilde recently prepared them for dinner after getting the suggestion from a friend.
Does our coffee drinking need a makeover?
Aug. 9 was a big day for a lot of folks around here. The start of the school year signals a return to normality, the rush of life once again begins in earnest. Against this backdrop, I recently read an article in the The Atlantic that shocked me. The claim? Americans are drinking coffee … all wrong. Finland was used as a sort of “coffee case study” against the American coffee drinking mentality. The statistics were shocking. Finns drink twice as much coffee as Americans.
Tough nuts to crack: Picking black walnuts

My dad ate pig brains for breakfast this morning
I’d like to think I’m the open-minded sort of person who hears about eating pig brains and says, “Wow, that’s a great use of the whole animal!” I fear I’m not quite to that point yet. My dad and my Uncle James have similar backgrounds. Both were raised in modest country settings in North Carolina. Both did very well for themselves, becoming career businessmen who left the farm behind many years ago. Dad has since traded his Hart Schaffner Marx for overalls and Carhartts.
