Spiced Grilled Shrimp and Spaghetti Squash
Spaghetti squash is not pasta and should stop pretending to be. It is its own thing, and it works best when you treat it that way. Halved and microwaved for ten to twelve minutes until the strands pull apart with a fork, then piled in a bowl and topped with grilled shrimp tossed in smoked paprika, garlic powder, olive oil, salt, and pepper. Finished with chopped fresh parsley. The shrimp take two to three minutes per side on a hot grill. The squash takes longer but needs no attention.
Pineapple Fish Taco Bowls
These bowls feature orange roughy, an easy pineapple tomato salsa and a creamy avocado sauce. All of the ingredients made for such a yummy combo, but this is one of those recipes that is highly versatile. Trade out the orange roughy for any flaky white fish and, in the salsa, feel free to sub mango for the pineapple.

#MeToo, Bullying And What We All Can Do Now
Indeed, it is an interesting time with so much continuing to come out in Hollywood, the media, other industries, and even our state government related to the sexual harassment of women - women who have remained silent for years. Like those women, I too have been harassed in various ways over the course of my career, even in recent years - and yes, even in top leadership roles. The newspaper headline about my departure or the email citing that I was moving on never fully told the real story.
Greek Yogurt Pancakes and Pineapple-Blueberry Syrup
Starting my mornings off with a delicious breakfast is definitely a MUST for me and it doesn’t get much better than pancakes. Am I right? Growing up pancakes were always considered such a treat – sweet and fluffy all drizzled with gooey maple syrup, I mean it was like dessert for breakfast. Well pancakes don’t have to be unhealthy and just because these aren’t loaded with sugar doesn’t mean they have to taste bad either.

This black-eyed pea salad is super yummy with chips as a dip, makes a delicious topping for eggs, salad or tacos and even works well as a fresh tasty side salad. Black-eyed peas by themselves are pretty boring and bland, but combined with the host of other ingredients in this salad they really come alive.

This festive frittata with creamy Yukon Gold Potatoes and zingy red pepper is soon to be the hit of the holiday brunch. By Kim Lee This breakfast frittata is appropriately studded with red and green holiday colors. My family always enjoys an amazing brunch before tearing into our gifts on Christmas morning.
