Seared Scallop and Quinoa Salad Recipe
If there’s one thing Lisa Ahier knows, it’s seafood – the owner of Tofino’s SoBo Restaurant served it for years, drawing on the bounty of the neighbouring Pacific to craft healthy and flavourful dishes for her ever-changing menu. SoBo has closed, but many of Ahier’s popular recipes (such as the Cedar Negroni) are available in her two cookbooks. In her most recent book, Together at SoBo, she shares the formula for what she says is one of her favourite dishes: this Seared Scallop and Quinoa Salad.
Cedar Negroni Recipe
This version of the essential aperitif takes on subtle notes of our coastal rainforest with the help of the Old Growth Cedar Gin from Tofino Distillery. If this gin isn’t on your local liquor store shelves, you could get a dried cedar shaving from a woodcarver and toss it into some standard gin, along with the orange peel. Or maybe it’s a good incentive to jump on a plane, train or automobile (or ferry) and come on over to Tofino to pick up a few bottles.

For a Lighter Version of Eggs Benny, Try Spaghetti Squash Patties With Poached Eggs
This toothsome dish was created by my sous-chef, dear, sweet Laurence Fisette, who jogs, surfs, practices yoga and still manages to dedicate the whole of her heart to preparing, cooking and serving food to appreciative guests. There’s a dash of my Southern inspiration in this recipe, blended with her commitment to eating fabulously well and healthily at the same time.
Try This Grilled Pattypan Squash With Green Polenta and Garlic Aioli for a Tasty Vegetarian Meal
This recipe was conceived when we were making our signature polenta fries one lunch service and realized we had loads of polenta left over. I decided to turn it into a light vegetarian meal, heavy on the herbs. It is now a staple dish in our kitchen. It also looks beautiful on a plate, so you’ll get lots of oohs and aahs from your guests.
Mushroom, Caramelized Onion and Goat Cheese Pizza
Chances are, if you live in (or have visited) Tofino, you’ve enjoyed Lisa Ahier’s ‘Sophisticated-Bohemian’ (SoBo) approach to food and eating. Her recipes always have a Pacific Northwest flair and focus on locally-sourced ingredients. The key to this recipe for Mushroom, Caramelized Onion and Goat Cheese Pizza is the variety, flavour and texture in the mushrooms. Do your best to source a good haul from your local market.
