Grilled Chicken, Pancetta, and Zucchini Wheels
I saw these at a neighbourhood cookout and could not figure out how they were assembled until the host showed me. Thin slices of chicken breast layered with slices of zucchini and strips of pancetta, rolled up tightly, and skewered alongside baby potatoes. Brushed with olive oil, sprinkled with rosemary, seasoned with Badia Complete Seasoning, and grilled until the chicken was cooked through and the potatoes were tender.
Artichokes, Pancetta, and Cheese Cups
My mother-in-law brought these to Easter lunch in a Tupperware box, still warm, the pastry steaming when she cracked the lid. I ate three before anyone sat down and spent the rest of the meal trying to get the recipe out of her. She finally wrote it on a napkin. Frozen artichoke hearts and pancetta, sautéed together, mixed with mozzarella, parmesan, and a few tablespoons of whipping cream, then tucked inside puff pastry squares and baked in a muffin tin.

Italy is the birthplace of the Carnevale, which makes February a fun time to visit, especially Venezia. These bars are sooo delicious, with a sweet, slightly tart and lemony flavor, mixed with a shortbread-buttery taste. Perfectly crumbly, with just the right amount of crunchiness, from the rolled oats mixed in the pastry. And the right amount of gooey-ness, from the blueberries exploding in the oven and releasing all their juiciness.

I wish I could tele-transmit the flavor and aroma to you.

Today’s recipe is not for your traditional gnocchi, made with a mixture of mashed potatoes and flour and cooked just like pasta in boiling water. Not these! Gnocchi alla Romana are just as tender and as delicate. But they are made with semolina flour, milk, egg yolks, a touch of nutmeg and lots of cheese.

Pistachio Orange Biscotti
What I love most about these biscotti is not just the flavor combination (chocolate, orange and pistachio is a must-try!). But the crunchiness and crumbi-ness (if there is such a word) of these cookies. Most biscotti you find around are a little dry and sometimes jaw-breaking crunchy. With today’s recipe you’ll get a crunchy enough cookie that is great for dunking (think: cappuccino, latte, steamed milk, tea …), but not too hard nor too dry, which is perfectly enjoyable all by itself.
