This ice cream is absolutely delicious. To start, honey makes ice cream incredibly smooth and creamy. To interrupt the smooth, we add sponge toffee — such fun to make! As the candy dissolves, it adds pockets of a toffee-like syrup, along with lovely crunchy bits that get stuck in the teeth in lingering ways.

“Are you soaking the raisins?” “Are you grating fresh nutmeg?” “Are you using a proper Caribbean rum?” Well, we are now, thanks to the schooling by our customer Rhonda (and the fresh nutmeg her mom brought back from St Vincent and the Grenadines). Our rum & raisin ice cream now meets her very high standards, so much so that she asked us to make a 5-quart tub for a family gathering. Apparently it passed muster there as well.

We replace the coconut milk with lemonade from concentrate in this blushing-pink ice cream. It may seem odd to be massaging the lemon zest with the sugar, but the jagged edges of the sugar crystals aggravate the zest, teasing out more of its oils. More oils mean more flavour. You’ll notice we don’t call for the base to be strained.

Pink ice cream,” as little Ruthie calls it, is the favourite of one of our favourite visitors. The rest of us call this lovely summery ice cream “Strawberry Ripple.” It’s made with July’s ripest berries and threaded with a rosy ribbon of strawberry swirl. You can also add beet juice to seriously pink up things. Using fresh berries at the peak of strawberry season really makes for a bright, strawberry sauce.
