1. Introduction A food system encompasses food production, processing and packaging, distribution and retailing, and consumption [1]. Achieving sustainable and healthy food systems in support of human and planetary health is a global challenge [2]. Currently, malnutrition is mostly prevalent in sub-Saharan Africa, with an approximation of 50% of the world’s undernourished human population inhabiting this region [3].
