Effect of spray‐dried pomegranate‐peel polyphenols on the inhibition of lipid oxidation
Pomegranate-peel polyphenols, specifically the punicalagin, have gained importance due to their potential antioxidant capacity, and because of this have been proposed different methodologies to encapsulate and protect the polyphenols for proposing their uses. The objective of the present work was to optimize the spray-drying of pomegranate-peel polyphenols and additionally to evaluate their antioxidant activity based on lipid oxidation inhibition.
Impact of Fat Replacement by Using Organic-Candelilla-Wax-Based Oleogels on the Physicochemical and Sensorial Properties of a Model Cookie
Abstract : Oleogelation is an alternative process to improve the nutritional properties of food by creating soft-matter structures with the same functionality as commercial fats (shortenings). In this study, oleogels were produced by adding organic candelilla wax at 3% (OC03), 6% (OC06), and 9% (OC09) to extra-virgin linseed oil, and then characterized by their physicochemical properties. Furthermore, the physicochemical and sensorial properties of five cookie formulations were evaluated.
The Insecticidal Activity of Azadirachta indica Leaf Extract: Optimization of the Microencapsulation Process by Complex Coacervation
1. Introduction The increasing population worldwide demands the production of considerable amounts of food. Agricultural food production is a necessary activity to cover the feed demand. The trend in agricultural food production is to reduce the use of synthetic insecticides. Although these organic biocides are highly effective in controlling pests, they cause health problems to humans, contaminate soil and water, and are bioaccumulative [1].
