1. Introduction Tea is among the most consumed natural beverages worldwide. Its composition and taste can differ substantially depending on the processing treatments. In fact, based on the fermentation degree, tea can be classified as unfermented tea, mainly preserving the fresh leaves composition, yellow tea, fermented for 10–20%, and black tea, fermented for 80–90% [1].
