Efficiency of Natural Preservatives on Stability and Shelf-Life Prolongation of Phycobiliproteins

ABSTRACT Natural preservatives help maintain the quality and natural label of phycobiliproteins (PBPs) for safe use in food supplements. This study assessed the stability of liquid PBPs from Spirulina using ascorbic acid, glycerin, chitosan, agave syrup, and rosemary extract at 0.5%, 1%, and 2%. Agave syrup (2%) extended PBP half-life to 119 days at 4 °C, and combined with ascorbic acid, up to 580 days with a 75-day shelf-life.
