As secondary metabolites, these compounds not only possess pleasant aroma but also exhibit antioxidant, antibacterial, and anti-inflammatory properties. This makes them popular as food additives for preservation and flavor enhancement.1, 2 Despite these advantages, the physicochemical properties of CEO present certain challenges for its application.
