Nothing could have prepared me for the revelation that awaited me on a quiet Sunday morning in Paris. After a seamless one-seat train ride from the airport (AHEM), I stepped out of my hotel with a plan to meet friends a few miles away for Sancerre and oysters freshly shucked on a sunny sidewalk. Without even glancing at my phone, the choice for how to get there seemed obvious.
