A lipidomics roadmap: from basic research to societal challenges
|
Abstract Lipidomics, a rapidly evolving discipline at the interface of biology and analytical chemistry, seeks to comprehensively characterize the lipid composition of biological systems. Driven by advances in mass spectrometry, chromatography and computational analysis, lipidomics has enabled the high-resolution mapping of lipid networks and their functional dynamics across molecular, cellular and organismal scales.

Differences in metabolic profiles of lupin-based beverages produced with various fermentation techniques
Abstract Plant-based beverages made from protein-rich raw materials are gaining popularity due to the increasing demand for sustainable food production. However, these beverages may suffer from undesirable sensory or nutritional properties. To address these challenges, fermentation could be employed in their production.

Existing food processing classifications overlook the phytochemical composition of processed plant-based protein-rich foods - Nature Food
Abstract According to existing food processing classification systems, plant-based protein-rich (PBPR) foods are often considered ‘ultra-processed’—and therefore perceived as unhealthy—despite their ability to provide various bioactive compounds beneficial for human health. Here we used a non-targeted metabolomics approach to analyse the impact of processing on the biochemical composition of PBPR foods.
Chemoenzymatic Synthesis of ABC-Type Enantiostructured Triacylglycerols by the Use of the p-Methoxybenzyl Protective Group
1. Introduction This report focuses on the synthesis of enantiopure structured triacylglycerols (TAGs), which we have named enantiostructured TAGs. Glycerol is prochiral, and the prerequisite for a TAG to become chiral is that the fatty acids accommodating the terminal 1,3-positions are different, regardless of the fatty acid occupying the central 2-position. Accordingly, chiral TAGs may be classified as AAB- and ABC-type TAGs, constituting two or three different fatty acids, respectively.

Advanced Tandem Mass Spectrometric Analysis of Complex Mixtures of Triacylglycerol Regioisomers: A Case Study of Bovine Milk Fat
Fats and oils are essential components of the human diet, playing a crucial role in health and well-being at all ages. Triacylglycerols (TAGs) are a major component of natural fats and oils, consisting of a large variety of fatty acids (FAs) regio- and stereospecifically distributed in the glycerol backbone.

Analysis of triacylglycerol and phospholipid sn‐positional isomers by liquid chromatographic and mass spectrometric methodologies
3.2.5 Algorithmic interpretation of MSn fragment data As the fragmentation data of TG regioisomers in natural samples can be complex, and the manual interpretation time consuming and often extremely challenging, several tools have been developed to address this problem. One of the main challenges in the analysis of TG regioisomers in natural samples is the overlapping structurally informative fragment ions from multiple isobaric TG species.
