Breeding crops for resilience to a changing climate
Strategies to use on your farm: a breeder’s perspective By Brett Grohsgal Global climate change is real. The few citizens and elected officials who deny the heavy weight of scientific evidence may temporarily slow some societies from taking a better path, but meanwhile all agriculture must adapt very fast. I write this article to empower farmers and crop breeders: we can and must build a better line-up of crops that will feed humans in the more difficult future.
Insect Flour - The Cook's Cook
You may have heard people talking about eating bugs recently; the United Nations Food and Agriculture Organization (UNFAO) released a report in May of 2013 prescribing a future diet of entomophagy (insect eating) as one solution to the pressing issue of how to feed 9 billion people in 2050 without further taxing an already depleted planet. If you’re an American your initial reaction may have been shock, surprise, amusement or disgust.
Portuguese Shrimp Rissoles - The Cook's Cook
Looking for something different to serve for your next party? Stepping away from the usual appetizers like stuffed mushrooms and scallops wrapped in bacon that I often encounter at social events, I like to serve up some Portuguese flavors. Portuguese fare, often referred to as peasant food, has started to evolve with modern influences. When I was a child, my Portuguese family did not have appetizers or starters like there are today, except for a special holiday or party.
Piedmonte Morning - The Cook's Cook
On a recent trip to the Piedmont region of Italy, the hilly area that borders France and Switzerland, photographic opportunity and a lovely view intersected for me and…ecco! (That’s voilà! in Italian.) Your ability to capture in a photo the picture you see with your eyes (which are vastly more sensitive to light and have more color receptors than any camera) will greatly improve if you have a bit of basic photography knowledge.
Blueberry Trees and Blue Berries that are Not Blueberries - The Cook's Cook
As far as fruit crops go, blueberries are a rather recent vintage, dating back to the early 1900s. Wild plants were transformed into domesticated varieties by a breeder at the United States Department of Agriculture (USDA) in Beltsville, Maryland.
Improvising Pie Weights - The Cook's Cook
When you have to blind-bake a pie crust (or any crust) don’t spend money on fancy pie weights. Use dry beans or rice or legumes or grains of any kind. You’ll probably need 3 to 4 cups. I have been using the same giant jar of dried beans, etc., for at least 30 years. They go into the foil-lined crust, and afterward they cool off and go back into the jar. My mix of ‘pie weights’ has a variety of dried beans, split peas, lentils, arborio rice, wheat kernels, and other grains.
