Margot has been a presence in Denver’s culinary scene since its pop-up days as a little secret in passing culinary conversations. Chef Justin Fulton and his wife, Maggie, decided to move back to his home state of Colorado to raise their family and hopefully pursue his first solo venture.

“To be Southern is to be many things.” This understanding of the patchwork of Southern culture led to the naming of Mary Allison Wright and McLain Hedges’ newest restaurant, Rougarou. “Le Rougarou” refers to a shapeshifter found in Cajun folklore, historically used as both a cautionary tale and a source of mischief. But for Mary and McLain, co-creators of Yacht Club, it also represents the multitudes found with Southern culture and cuisine.
