Chorizo Traybake

A few years ago, I enjoyed the most incredible mini-break on Kangaroo Island. That is the closest I’ve been to the South Australian mainland. It’s not from a lack of desire; I’ve heard wonderful things about the Festival State, and by all accounts the food and wine alone are certainly worth a flight over. It’s just that other places have taken precedence. That won’t be the case for long, though, now that I know about Heidelberg Cakes (and their super-special Christmas offerings!).

This traybake takes inspiration from a traditional jambalaya, but it’s served in a slightly different way, with layers of rice between the gorgeous prawns and chicken which burst with flavour from the smoked paprika and sweet red capsicum. With simple and time-saving tricks, I promise this dish will become a favourite speedy midweek meal.
