Sushi Rice Bowl
Woke up feeling ambitious today. Ambitious enough to try my hand at making sushi. Made some rice in the rice cooker, julienned an assortment of vegetables, picked up some sushi-grade tuna at the farmers’ market…and went to work. And, that’s when I quickly remembered (despite my temporary memory loss) why I leave the art of making sushi to the professionals. Ugh, it never quite turns out like I envision.

Charred Corn, Tomato and Burrata Salad
Inspired by fresh Italian summer foods, this charred corn and tomato salad is topped with fresh basil, olive oil and burrata. It’s a delight to enjoy on a hot evening with fresh summer tomatoes. Of course, I’m not the first person to write about the experience of eating in Italy and I certainly won’t be the last.
Fruit and Yogurt Pops
Fruit and Yogurt Pops are a refreshing, wholesome treat for hot summer days. Layered with mango and Greek yogurt, they’re quite eye-catching too. Who’s craving summer popsicles? In other words, they can be eaten without guilt! They are easily mixed up with frozen mango and almond milk.
Vanilla and Kiwi Semifreddo
This vanilla and kiwi semifreddo is a very creamy, soft and delicious frozen dessert. Perfect for a hot summer’s day. So what exactly is a semifreddo, well it is nothing fancy but an Italian semi froze dessert more or less like an ice cream? It is often made with cream and eggs and supposes to have a creamy texture. Being a non-eggetarian, of course, I had to come up with an eggless version of this kiwi semifreddo.
Blackberry-Key Lime Cheesecake
A smooth, creamy, no-bake key lime cheesecake filling nestled in a toasted graham cracker crust, and crowned with the most luscious blackberry topping. What was supposed to be a classic key lime pie, turned into this… So you might be wondering how my pie turned into a cheesecake. Well, first it started with the graham cracker crust. Unfortunately, I made too much crust and it wouldn’t fit into a 9-inch pie plate, so I instead pressed it into a springform pan.
Watermelon and Lime Sorbet
This refreshing Watermelon and Lime Sorbet is super easy to make and you only need 2 ingredients for this sweet summer dessert. I still had so much watermelon left over after last weeks Grilled Watermelon Salad! I decided that the only logical option was to create another new recipe! And since last weeks recipe was a savory warm salad I decided to go in the opposite direction this week. So I decided to create a frozen Lime Watermelon Sorbet that will keep you cool in this rising heat.
Macerated Peach and Burrata Salad with Basil Oil
Peach and burrata salad is what you need this summer. My caprese-inspired salad is made up of juicy, macerated peaches, creamy burrata cheese and a herbaceous basil oil. This salad is simple and all about the ingredients.First the peaches. I’m so excited for peach season. Before getting into desserts, I wanted to make something with a straight up, uncooked peach. I macerated them to enhance the sweetness, acidity and juiciness.
Summer Chickpea Salad with Tomatoes, Cucumber and Avocado
A perfect picnic or lunch dish, this summer chickpea salad is loaded with tomatoes, cucumbers and avocados to be seriously satisfying. Living just down the street from three of my grandkids, I have learned to make all my recipes in quantity so that I have some tasty snacks to offer hungry kids when they drop by.
Sweet Tahini Mousse
This cool, no-bake dessert is a sweet treat made with tahini, dates, and whipped cream. Simple, satisfying and beautiful. I often have a jar of tahini on hand. It’s an essential ingredient for hummus and great for drizzling over roasted vegetables, though I had never really thought of using it in a sweet preparation. Somewhere along the way, I came across a recipe for tahini mousse. I had jotted down the idea in one of my many recipe notebooks.
No-Bake Chocolate and Raspberry Squares
With a nutty, chocolate base, a soft raspberry jam-like layer, and chocolate glaze on top, these easy No-Bake Chocolate and Raspberry Squares will have you reaching for seconds. Miso and Brown Sugar Ice Cream
This might look like your usual vanilla ice cream, but it is made with brown sugar for added caramel-y flavor and miso for a hint of salt and umami. Brad and I love entertaining. Being able to welcome friends, old and new, into our home so we can feed them and get lost in conversation is what makes our hearts full. We did a lot of that this past weekend and I’m still riding the wave of complete exhaustion and total elation.
Summer Zucchini Salad
Cool Recipes for the Hottest Days, Featured, Side Dishes June 17, 2018 by Leili Ansari 0 This summer zucchini salad with plums is a lazy-man’s salad, but in the best way possible. Throw it together, take it to a potluck or picnic and enjoy! If I can put something off, I will. I’ll only do laundry when the only clean clothes I have left are sweat pants and the winnie the pooh pajamas I’ve had since I was eight.
