1 INTRODUCTION Extraction is one of the oldest food processing technologies used to recover value-added compounds (e.g., polyphenols, protein, polysaccharides, terpenoids, pectin, etc.) from plant or animal materials (Okonkwo, Hussain, Onyeaka et al., 2023). These compounds are usually held in the cell matrix by various covalent and noncovalent bonds, such as ester bonds, ether bonds, hydrogen bonds, etc.
