Intestinal phase (120–240 min) The total starch hydrolysis rates of all rice landraces and the reference food increased significantly at 120 min during the gastric-intestinal transition, with notable differences among them (p<0.05). In the intestinal phase, Aw exhibited the highest total starch hydrolysis (36.47±2.57%) at 240 min, followed by Kw (21.68±1.38% at 240 min) and Bw (17.35±3.07% at 210 min), whereas the reference food showed the highest hydrolysis (80.92±1.20%) at 180 min.
