Donald Zammit retired as a chef in 2017 after a successful 23-year career. He discovered his passion for the culinary arts at a young age and worked in various establishments, perfecting his craft. He was exceptionally skilled in building flavor foundations, mastering sauté techniques, and exploring the art of sauce-making, always emphasizing the importance of using fresh ingredients sourced from farmers' markets.
As he honed his culinary skills, he embraced the use of seasonal fruits and vegetables, believing that the freshness of ingredients directly enhances the dining experience. His culinary journey was not just confined to the kitchen; it also took him around the world. His passion for food and travel brought him to many parts of Western Europe, where he immersed himself in the cultures of England, Ireland, Scotland, Wales, France, Italy, and Malta, each enriching his approach to food.
In England, he enjoyed traditional dishes like humble pie and Beef Wellington, and he appreciated the refined complexities of French and Italian cuisines, which influenced his cooking style. His explorations extended beyond Europe to the Caribbean and Mexico, where he encountered a wide array of flavors that further influenced his culinary repertoire.
Beyond exploring global cuisines, Zammit has traveled extensively across the United States, experiencing a diverse range of regional culinary styles. Though no longer a professional chef, he continues to share his culinary passion with friends and family, recreating the rich tapestry of flavors he discovered during his travels.
An avid lover of the outdoors, he enjoys hiking, sailing, biking, and swimming. He is also an adventure sports enthusiast, holding a scuba diving certification and having experienced both skydiving and heliskiing. These activities reflect his love for thrills and the outdoors.
In retirement, he has chosen to give back to his community by serving on the board of the Edward H. Butler Foundation in Buffalo, New York. This foundation supports various charitable initiatives and provides grants to enhance education, healthcare, and community development.
Donald Zammit graduated from Brooks School in North Andover, Massachusetts, in 1995 and earned a Bachelor of Science from the Rochester Institute of Technology in 2000. Through his professional and personal endeavors, he has lived a life marked by passion, discovery, and service.
