1. Introduction Spinach (Spinacia oleracea L.) is a popular leaf vegetable of the amaranth family (Amaranthaceae). It is one of the ten healthiest foods, as it contains large amounts of vitamins, minerals, and antioxidants and has anti-inflammatory, anticancer, and hypoglycemic and hypolipidemic properties [1,2,3,4]. Spinach contains plenty of vitamin K, which helps support bone health. The widespread use of spinach in dietetics is due to its low-calorie content.
