Different Kinds of Yeast
Full question Sometimes a bread recipe states dried yeast, sometimes it states fresh yeast - whatever the case, I always have the wrong kind in stock! Do you know of a conversion from one to the other? Thanks! Our answer There are 3 types of yeast commonly available, fresh yeast which comes in solid 'cake' form, active dry yeast and fast-acting or instant yeast (rapid rise).

Weights and Measures for Australia
Full question Hello Nigella and Team, my query is in regard to conversion of recipes. I am in Australia and wondering if there are differences between the U.K. weights and measures compared with the Australian ones? Thank you, MoyraMac. Our answer The main difference in measurements between the UK and Australia is that Australian tablespoons are defined as 20ml (4 teaspoons) whereas in the UK, and most of the world, a tablespoon is defined as 15ml (3 teaspoons).

Rococoa Cake
Print me Introduction Forgive the whimsy of its naming, but every time I've tried to rename this cake, I veer back to this. I used to refer to it as Venetian chocolate cake, because its inspiration comes from a cake of that name in Nick Malgieri's luscious chocolate book but as my cake changed from his specifications, the title seemed misleading.
Kerala Fish Curry
Print me Introduction This tamarind-tangy curry makes for a perfect dinner on a hot night; light enough not to knock you out, but spiced enough to prompt a heat-drowsy appetite. And it is such gloriously easy food to make. Chocolate Cloud Cake
Full question Hi could you tell me if the base for Nigella's Chocolate Cloud Cake from Nigella Bites can be made one day in advance? Thanks! Catrina. Our answer Most cakes, such as the flourless Chocolate Cloud Cake (from Nigella Bites), will keep well as they are quite moist. The cake can be made a day ahead and stored in an airtight container.
Christmas Creme Brulee
Print me Introduction I don’t need to tell you how beautiful this is: you can see. It’s extravagant, certainly, but it’s meant to be. And it feels like a treat, breaking through that gilt-tortoiseshell crust to the voluptuous depths of egg-nog-scented cream beneath. The tip of freezing the bowl before pouring in the smooth cream-custard I culled from Simon Hopkinson, for which and for whom I am always grateful. For US cup measures, use the toggle at the top of the ingredients list.
Feta Bites With Preserved Lemon Jam
Call me biased but I love feta. I always say, ‘Feta makes everything better’ – I’m aware that rhyming doesn’t help my cool factor, but feta is cheap, easy to find, incredibly versatile… need I say more? This recipe is fun and couldn’t be simpler. The preserved lemon jam comes together in minutes and works incredibly well with the deep-fried salty feta. I kid you not – this delicious dish impresses everyone and is perfect for sharing.

Nigella Lawson Insists She's Not a Chef. Here's Why That's Important
The seven biggest takeaways from her essay on feminism in the kitchen and taking pride in being a home cook. Before I began teaching myself how to cook in earnest—only about three or four years ago—I took a certain degree of pride in my lack of knowledge. “I’m not domestic. My powers exist outside of the home,” I used think to myself, smugly. This attitude, thankfully, is almost entirely dissipated from my consciousness.
