1 INTRODUCTION The use of medicinal plants for therapeutic purposes, a practice known as phytotherapy, has been an integral part of traditional medicine across various cultures for centuries (de Carvalho Nilo Bitu et al., 2015). Among these medicinal plants, beetroot (Beta vulgaris L.) stands out as a widely cultivated and consumed vegetable, particularly in the Mediterranean region.
