Introduction Ice binding proteins (IBPs)(1,2) (and also polysaccharides(3,4)) are a diverse class of biological macromolecules that achieve the molecular recognition of ice crystals in the presence of a large excess of water. INPs include those classed as antifreeze proteins (AFPs), which can depress the freezing point of water (and can also raise the melting point)(5) and are ice recrystallization (growth) inhibitors (IRI).
