This week, New York City elected Eric Adams as its next mayor against the background of an ongoing pandemic and a major global climate change conference. When Adams takes office, America’s largest city will have its first vegan mayor at a time when most leaders still refuse to acknowledge the links between animal farming, pandemics and climate change. In general, cities can be doing much more to address these threats, and Adams will be well-positioned to show them how.
