Preheat the oven to 350ºF (180ºC), then grease two 8-inch (20 cm) round cake pans and line the bottoms with parchment paper. In a large mixing bowl, combine the sugar and zest of 2 lemons, then rub the zest into the sugar with your fingers to release the oils and flavour it. Add the buttermilk, melted butter, oil, eggs, vanilla, and lemon juice. Mix with a hand mixer or whisk until smooth. Sift the flour, baking powder, and baking soda into the bowl, then add the salt.
