Not from awkwardness, not from boredom, but because something just happened in someone’s mouth and the brain hasn’t caught up yet. I had that silence the first time I tasted a tepeztate mezcal. The conversation we’d been having just evaporated. I set the glass down. I picked it up again. I wasn’t sure what I had just tasted, but I was sure it wasn’t what I thought mezcal was. That was thirteen years ago.

The two most famous agave spirits share a plant and a country. Beyond that, almost everything is up for discussion. The bottle arrives at the table in a brown paper bag. The label is hidden, the price is unknown, and the story that usually travels alongside it, the one about the maestro jimador who hand-selects mature agaves by moonlight, or the third-generation distiller working in a remote canyon in Oaxaca, goes unspoken. In a blind tasting, none of that matters. Only the liquid in the glass does. This is both the appeal and the brutality of blind evaluation.
