Makes 1 Serving ½ cup coconut milk ½ cup pure pumpkin puree¼ cup old-fashioned rolled oats1 tbsp pure maple syrup¼ tsp pumpkin spice ¼ tsp ground cinnamon In small bowl, combine pumpkin puree, maple syrup and pumpkin pie spice. In another bowl, mix rolled oats, coconut milk, and ground cinnamon. Grab a Mason jar and put half of pumpkin mixture at the bottom. Add oats and then top with remaining pumpkin puree. Store in fridge overnight and enjoy topped with fresh granola.
