Sharp, gingery pickled carrots with real crunch. Fifteen minutes of work, ready the next day, three weeks in the fridge. Of all my pickle recipes, this is the one to start with. Fifteen minutes of work, ready by tomorrow. Then they sit in the fridge for three weeks quietly getting better. Carrot is the ideal thing to pickle, and I have pickled a fair bit, from quick pickled red onions to pickled daikon and courgette pickle.

I Tried To Shortcut My Pickled Onions With A Machine

Pickled red onions take five ingredients and fifteen minutes of actual work, and the jar will quietly improve everything you eat for the next three weeks. You can have them in an hour. They will be better tomorrow. Onions are sturdy, which is why the brine goes on hot. The heat part-cooks them, takes out that raw squeak, gets the colour moving, and hands you an edible pickle within the hour instead of tomorrow.
