Abstract The coffee industry has an economic impact of over 100 billion dollars per year, making it one of the most valuable markets in the world. Coffee roasting is a crucial step that occurs before the extraction process and is essential to the final quality of the coffee. The roasting of green coffee beans is a complex process involving various chemical reactions that play a crucial role in determining the taste, colour and aroma of the coffee.

1 Introduction Real-world phenomena can usually be properly simplified and described through boundary or initial-boundary value problems [1, 2]. A particularly important example is given by Climate Change, indeed water is the primary medium through which Climate Change influences the ecosystem of Earth, and the fluid dynamic equations can be used to model the hydrogeological risks [3, 4] and the hydraulic risk [5].
