The po’boys are back in town at the Bolsa Bazaar, near Garland’s southern edge. Co-owner and Dallas PeeWee’s operator Roxana Hernandez needed the right bread—PeeWee’s uses a broadsword-sized baguette straight from a bakery in New Orleans—which means an eight-hour road trip is required. It’s a good thing; it’s the right kind of wait.

Five Meatball Subs That Prove Dallas’ Cred as a Sandwich City

A great meatball sub is one of the most important credentials needed for accreditation as a sandwich city. If you didn’t know, I will enthusiastically plant the flag: Dallas is a Sandwich City. We have the sloppy, saucy, cheese-stretchy meatball hoagies and the stained receipts to prove it. Here are five of my favorites. First things first: Jimmy’s meatball sub is not on this list. It doesn’t need to be spotlit like it’s some hidden gem.

Let Us Sing the Praises of Dallas’ Ugliest Sandwiches

Three years after Apollo 11’s lunar module eased on the moon, the roast beef sandwich landed at John’s Cafe. Like our moon, the sandwich hasn’t changed much since 1972. It’s still filled with carved bolts of roasted beef blasted to a crisp at the ends, with jiggly, melting-to-juices fat, lettuce, tomato, and mayo between toasted bread. Here’s the change: it once was triangles of white bread, not a hoagie roll.
