Modeling the Growth of Listeria monocytogenes Isolates in Low‐Temperature Environments
1 Introduction Listeria monocytogenes is a Gram-positive bacterium capable of growing in low-temperature environments. The growth temperature range of L. monocytogenes is broad, spanning from 0°C to 45°C (Jones and D'Orazio 2013). Although its maximum growth rate is slower at low temperatures such as 4°C, it can still survive and proliferate.
