With Oktoberfest coming soon, I wasn't surprised by a timely request from a reader for cream puffs that could be made ahead: "I'm having an Oktoberfest party and need to do as much ahead as possible. Serving cream puffs for dessert would be ideal, if they can be made ahead." Well, I do have a nice, make-ahead recipe. I thought you might like it, too. Puffs can be stored at room temperature or refrigerated prior to filling.
