Introduction Biofortification is a practical and cost-effective means of delivering micronutrients to populations that may have limited access to diverse diets and other micronutrient interventions [1]. The primary goal of biofortification is to reduce mortality and morbidity from micronutrient malnutrition and increase food security, productivity, and quality of life for poor populations in developing countries [2].

1. Introduction Fenugreek (Trigonella graecum-foenum L.) is an annual plant and belongs to the legume family, which has fodder, medicinal and spice uses, is also used as an organic fertilizer and produces about five tons per hectare of a relatively significant biomass [1]. The seeds of the plant have nutritional properties and stimulate the digestion process [2].
