1 Introduction Beef hamburgers, made from processed beef, are one of the most popular processed meat due to their high content of essential nutrients such as proteins, vitamins and minerals (do Prado et al. 2019). However, the nutritional quality of beef hamburgers has been called into question by health experts due to the presence of high levels of saturated fatty acids (SFA) contained in animal fat, which can constitute up to 30% of the product (Heck et al. 2017).
