Smoked Beef Stew
What elevates ordinary beef stew to extraordinary? Add some glorious wood smoke! Here's a beef stew with smoked beef. Get your smoker up to temp, around 240°. Cube the beef into about 1 inch cubes. Place in a foil pan in a single layer, and pour in just enough beer for the bottom half of the meat to sit in it. Season the top layer with salt and pepper. Smoke on full smoke for 1 1/2 hours. In the meantime, add the other ingredients to a slow cooker with whatever beef stew seasonings you like to use.
Chocolate Beer Cupcakes
This month, I'm incorporating BEER into some of my recipes in honor of the Northeast Wisconsin Craft Beer Festival , presented by Festival Foods, October 7th. The recipe I borrowed this from calls for an Irish Stout, like Guinness, but I used a local craft brew instead. To round out the cupcakes, I'm giving a nod to all things Irish! It may not have Guinness, but I'm using Jameson Irish Whiskey and some Bailey's Irish Creme.
Cider Roasted Pulled Pork
This month we've been featuring some great recipes with beer in honor of the Northeast Wisconsin Craft Beer Festival coming October 7th. While I typically prefer to smoke pork butts for pulled pork, this is a great recipe for making it in the crock pot. Apple and pork are naturally delicious together, so I decided to roast the pork in an Irish cider. The recipe is simple. Put it in the crock pot before leaving for work and you'll have delicious pork for dinner.
Smoked Meat Loaf
This week is a good reminder that pretty much anything you can make in the oven, you can make in the smoker... And add that delicious wood smoke flavor. This weekend I was in the mood for meatloaf. The recipe here is not my usual meatloaf, but it was very tasty. Meatloaf can get to go if you over mix it, so I like to mix all the other ingredients together first, then fold it into the meat. When done form it into a loaf.
Bourbon Cherry Smoked Pork Tenderloin
I love smoking pork tenderloin. It's fast cooking, and it takes on other flavors well. Here is a great version with some Door County Cherries. Start with the pork tenderloin. Rinse it with cold water and towel it dry. Then, rub it all over with yellow mustard and sprinkle liberally with your favorite rub. Â Here's mine . Set your smoker up for 230. And make sure your water reservoir is full. Smoke the pork on full smoke for about 2 hours until the internal temperature reaches 145.

Creole Chicken Breasts
If you are looking for a spicy option for chicken on the grill, try these beauties. Mix the Cajun seasoning, salt, and pepper. Brush the chicken with olive oil and sprinkle with the Cajun mix. Preheat the grill to medium high heat. Cook the breasts for about 5 minutes. Combine the mustard and honey. Brush the chicken breasts with the honey mustard about a minute before the breasts are done. Let the chicken rest for about 10 minutes before serving.

Apple Pie Cheesecake Bars
For Bake Someone's Day this week, I made some Apple Cheescake bars. The recipe was from one of those little cookbooks you find in line at the grocery store. It was called Fall Baking. In a large bowl, add the cookie mix and cut in the stick of butter using a pastry knife or two butter knives. Combine until the mixture is like coarse pebbles. Reserve 1 1/2 cups of the mixture, and press the rest into a greased 9x13 pan. Bake for 10 minutes. Then let cool for about 20 minutes.

Pork Spare Ribs | 93.9 WTBX
I always like to look for new ways to make ribs. The cooking process is always similar, but I like to change up the rubs, sauces, etc to see how it affects the flavor. These ribs ended up a bit spicy, but very delicious. Here's what you'll need for the rub: Mix the ingredients together, rub on ribs, then wrap them in plastic wrap and put them back in the refrigerator for anywhere from 4 hours to overnight. The longer the better.

NFL Power Rankings 2017: Week 1
NFL Power Rankings Week 1 of all 32 teams in the National Football League. The 2017 NFL Preseason is finally over. The preseason can get long trying to get excited about meaningless games. Especially when teams like the New England Patriots and the Kansas City Chiefs had key players get injured. But all the pain is finally over and week 1 is here. It is hard to describe that week 1 feel. Every team has a clean slate and is undefeated. Teams at the bottom of this list could be in the top 10 by week 3.

Classic Romesco Sauce
This is a classic European sauce, that is very robust - especially with the roasted Veggies! It uses an old fashioned thickening agent... Bread and nuts. Soak the ancho pepper in hot water for 30 minutes, then remove and dry with paper towel. Save the soaking liquid. Preheat the grill and set up for direct grilling over medium high heat. Toast the nuts in a frying pan over medium heat for 4-6 minutes, stirring occasionally to keep sure they brown evenly. Transfer to a plate to cool.
Mackinac Island Fudge
This is a take on the world-famous Mackinac Island Fudge. Charli sent me this recipe and said I had to make it if I wanted to impress her... Challenge Accepted! Mix these ingredients in a heavy sauce pan over medium heat. Bring to a boil and stir continuously for 6 minutes. Remove from heat, and allow to cool slightly. While it cools whisk these ingredients together... Pour the liquid into the bowl and beat with an electric mixer until thick and smooth.
Grilled Quesadillas
This week, I made some quick, easy quesadillas on the grill. You can obviously fill them however you like, but here is what I used. The sun-dried tomato jam really amps up the flavor. For the jam, just add as many of the sun-dried tomatoes to the food processor as you think you'll need. I used about half a jar for three quesadillas. Then, add a Tbsp or two of the oil from the jar and pulse until you get a jam-like consistency.
Bacon Wrapped Stuffed Smoked Turkey
It's a mouthful to say, and a savory mouthful to eat. Smoked turkey, stuffed with cheddar and jalapenos, wrapped in bacon and smoked to perfection! Take the tenderloins and flatten them slightly with a meat mallet. Then prepare the brine. Poultry has a tendency to dry out in the smoker, so a brine is always a good idea. I only needed about 4 cups total, so here is the brine I used. Mix together and pour into a resealable bag.
