Wake up. It’s time for our knee bends!” What my wife, Dawn, meant was not our usual trip to the university’s recreation center. She was referring to five hours of picking up litter along our two-mile section of state highway 8 near Troy. We have been volunteers in the Idaho Transportation Department’s Adopt-a-Highway program for nearly 25 years. We began when we suggested litter cleanup as a project for our church’s young men.

INGREDIENTS One package of four Aidells Pineapple & Bacon Chicken Sausages, diced 1 teaspoon Coconut oil 1/2 cup uncooked Basmati or Jasmine rice 1 cup hot filtered water 1/4 cup teriyaki marinade (I like Lowry’s brand, use your favorite or make your own!) 1 1/2 cup cauliflower rice 1 1/2 cup frozen peas and diced carrots mix 1 cup fresh pineapple, diced 1/2 cup green onions, diced PREPARATION Prepare all washing and dicing, set aside until ready.

by Diana Hooley It’s that time of year—time to get outside and have some fun. In the past, outdoor fun for me meant hiking a hill—or even a mountain. I’ve hiked several beautiful trails in Idaho’s mountains, but I’ve only hiked one of the “Idaho 12ers,” the nine peaks in our state over 12,000 feet. I discovered then that high-altitude climbing wasn’t for me. My daughter recently reminded me of this high-altitude problem when she climbed to Everest base camp this past spring.
